Cilantro and Carrot Blend Soup is a vibrant and aromatic dish, balancing the earthy sweetness of carrots with the fresh, zesty notes of cilantro. For a Serving Size of Two:

Ingredients:

  • 200 grams chopped carrots
  • 30 grams chopped fresh cilantro leaves
  • 50 grams diced onions
  • 1 clove minced garlic
  • 1 teaspoon olive oil
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon black pepper powder
  • 1/4 teaspoon salt, or to taste
  • 400 ml vegetable stock or water
  • 1 tablespoon lemon juice

Procedure:

  • Heat olive oil in a pot over medium heat. Add cumin seeds and let them splutter. Add diced onions and minced garlic, and sauté until softened.
  • Add the chopped carrots, turmeric powder, and black pepper. Stir well and cook for 3–4 minutes.
  • Pour in the vegetable stock or water. Cover and simmer for 15–20 minutes until the carrots are tender.
  • Transfer the cooked carrots and liquid to a blender. Add fresh cilantro leaves and blend until smooth. Adjust the consistency by adding more stock if needed.
  • Return the soup to the pot. Stir in salt and lemon juice. Simmer for 2–3 minutes to combine flavors.
  • Ladle the soup into bowls and garnish with a sprig of cilantro or a drizzle of olive oil. Serve warm.
