Arugula, Watermelon, and Feta Salad

This Arugula, Watermelon, and Feta Salad is a refreshing and vibrant dish perfect for summer. The peppery taste of arugula pairs beautifully with the sweet juiciness of watermelon, while the creamy feta adds a rich, salty contrast. For a Serving Size of Two:

Ingredients:

  • 100 grams arugula (rocket leaves)
  • 200 grams cubed watermelon
  • 75 grams crumbled feta cheese
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • Salt, to taste
  • Black pepper, to taste
  • Fresh mint leaves for garnish

Procedure:

  • Rinse the arugula under cold water and pat dry. Cut the watermelon into bite-sized cubes and crumble the feta cheese.
