Ingredients
- 2 Tbsp. Orange Juice
- 1 Tbsp. Lemon Juice
- 1 Tsp. Honey
- 1 Tsp. Olive Oil
- ¼ Tsp. Black Pepper
- 2 Tbsp. Minced Onion
- 1 Cup Seedless Watermelon
- 2 Tbsp. Feta Cheese
- 1 Cup Baby Arugula
- 2 Tbsp. Mint leaves; Chopped
- Kosher Salt
Method
- Prepare Dressing – In a bowl, add orange juice, lemon juice, minced onion, olive oil, black pepper, and kosher salt. Whisk them well.
- In a bowl, add arugula, watermelon, feta, and mint leaves. Drizzle the dressing and toss them well.
