Green Eggs

A great start to the day makes the entire day energetic. There are different ways of cooking eggs and one among them is these delicious green veggie eggs. Green eggs along with spinach and leeks will supercharge the morning and supply essential nutrients.
Nutritional benefits:
Eggs contain the highest biological value for protein and are great for muscle building. They are good in protein and vitamin D and are also filling therefore helps to lose weight. Spinach is one of the healthiest green vegetables to be added to a dish providing great amounts of Vitamin A, folic acid, nitrates which help reduce blood pressure levels, good for eye health, and fiber helps in constipation. Yogurt is good for gut health.
Ingredients:
- ½ teaspoon oil
- 25 grams trimmed leek
- 1-2 garlic clove
- ½ teaspoon coriander seeds
- ½ teaspoon fennel seeds
- A pinch of chili flakes
- 50 grams spinach
- 1 egg
- 1 teaspoon yogurt
- ½ teaspoon lemon juice
- Oregano and black pepper as per taste

Method:
- Start by heating some oil in a skillet and add trimmed leeks along with a pinch of salt. Allow cooking until they are soft and add in the garlic, coriander seeds, fennel seeds along with chili flakes.
- Then add in the spinach and turn down the heat and allow cooking.
- After the cooking process is completed add in the egg and fry until cooked.
- Stir in some yogurt in the mixture and season.
- Serve on a plate and squeeze some lemon juice along with oregano and black pepper if required
