Instant Lentil Tacos

Instant Lentil Tacos is an interesting and very easy to make recipe. Made with the goodness of vegetables and lentils, it provides you with a dose of fibre, protein and other essential nutrients.

Whole wheat flour is a good source of fibre, iron and zinc. Cabbage is a low calorie vegetable which is an excellent source of fibre. It also contains antioxidants which reduces the risk of chronic diseases.
Ingredients
- 20 grams red onion
- 20 grams red pepper, chopped
- 10 grams boiled beans
- 1 lettuce leaf
- 1 teaspoon olive oil
- 20 grams tomato
- 20 grams whole wheat flour
- 1 large garlic clove
- 1 tablespoon coriander, chopped
- ½ tsp smoked paprika

Method
- Combine whole wheat flour with water and knead into a soft dough. Keep it aside for 10 minutes.
- Divide the dough in 2 portions and roll out in the shape of chapatis.
- Heat a non-stick tawa with some oil and cook each chapati on a medium flame till it turns brown on both sides. Keep aside.
- In a bowl combine all the vegetables and add all the spices.
- Now in a saucepan, heat a little oil and saute the vegetable mixture and keep them aside.
- Then, place a cooked chapati or tortilla on a clean and dry surface, apply the vegetable mixture as enough stuffing along with lettuce leaf and roll it up tightly to form a taco. Repeat the process to make another taco if needed.
- Serve immediately.
