Amaranth Fritter with Bell-pepper Dip

Amaranth fritters with Bell-pepper dip is an amazing dish which is easy to make yet is highly nutritious. It is a perfect munching snack to pamper yourself whenever you suffer hunger pangs.

Nutritional benefits –

Amaranth flour is said to have ample health benefits. It is rich in calcium, protein and also minerals like iron, magnesium, vitamin A, vitamin B and vitamin C. Also it is said to maintain blood glucose levels and thereby is highly recommended for patients with diabetes.
Bell peppers have fewer calories and increase the metabolism, thereby making it a super food for people who are following a diet on weight management. Also, they contain antioxidants which help in building immunity.

Ingredients –

For Fritters –

  • 20 grams beetroot
  • 20 grams Amaranth seeds
  • 20 grams onions
  • 1 whole egg
  • ½ teaspoon cumin powder
  • ¼ teaspoon turmeric

For Bell pepper Dips –

  • 30 grams red pepper
  • 2-3 garlic cloves
  • 20 grams sliced onions
  • 1 teaspoon red chili flakes
  • ¼ teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon olive oil

Method –

For Fritters-

  • Take all the ingredients for fritters and mix them for the patties together with a large spatula until well blended.
  • Now heat the oven to 180 degree Celsius and line a baking tray with baking parchment.
  • Make small round patty shapes from the mixture by pressing between your palms.
  • Lay each patty on the baking tray and bake for 20 minutes until they turn golden in color.

For Bell-pepper dip-

  • In a small pan add oil followed by garlic cloves. Cook until it turns yellow in color and remove from heat.
  • Now, in a food processor combine all the ingredients like bell pepper, scallions, cumin, smoked paprika, balsamic vinegar, walnuts to form a coarse paste.
  • Serve and enjoy.
