Cauliflower – Spinach mash topped with nuts and amaranth seeds

Mashed Cauliflower is a great alternative to mashed potatoes, and it still tastes rich and creamy. Addition of Spinach, nuts and amaranth seeds works perfectly well with garlic and herb flavour.

Spinach is a dark, leafy green vegetables that is an excellent source of Vitamin A, K and C, magnesium, iron and manganese.
Ingredients:
- 20 grams cauliflower, trimmed down to the florets
- 15 grams fresh baby spinach
- 1 teaspoon amaranth seeds
- 5 grams almonds
- 1 garlic clove, minced
- 1 teaspoon oil
- Salt and pepper to taste

Method:
- Cook cauliflower and shallots in large pot of boiling salted water until tender, 8 to 10 minutes. Drain well.
- Place amaranth seeds on a non-stick skillet and roast it.
- Drizzle the olive oil in a small saucepan over medium heat. Add the garlic and sauté for about a minute, then add the spinach and continue sauteing until the spinach just begins to wilt.
- Place the cooked vegetables in processor. Add spinach, roasted amaranth seeds and oil. Blend to smooth puree.
- Season to taste with salt and pepper.
- Last, sprinkle almonds on it, and serve well.
