Almond pesto

Need a quick and easy dressing, grab on a handful of almonds and swirl them around with herbs. The almonds when roasted add an amazing depth and favour to the pesto. Any nuts of choice can be added to prepare the pesto. Do not forget to warm up your winter with this nutritious and tasty dressing.
Nutritional benefits: Almonds are the primary ingredient of this recipe and are a great source of Vitamin E and magnesium. The fats, fibre and protein in the almonds help in lowering the blood pressure and are great for lowering cholesterol levels. They reduce hunger and helps in reducing weight. Basil adds a lot of flavour to the recipe and has a good amount of vitamin K, calcium and magnesium.
Ingredients:
- 15 grams almonds
- 30 grams fresh basil
- 1 garlic clove
- 1 teaspoon lemon juice
- 5 grams olive oil
- Salt and pepper as per taste

Method:
- Preheat the oven at 180º C.
- Place the baking tray in the oven; add almonds and garlic. Let them bake for 10 minutes or until they change colour to golden brown.
- Add the remaining ingredients and the roasted garlic/ almonds to the food processor.
- Grind them by adding few drops of water to prepare a smooth paste.
- Serve it by garnishing with seeds or coriander seeds!
