For a Serving Size of Two:

Ingredients:

  • 150 grams cooked chicken breast, sliced or shredded
  • 100 grams thinly sliced red cabbage
  • 50 grams julienned carrots
  • 50 grams julienned cucumber
  • 30 grams thinly sliced red bell pepper
  • 20 grams chopped fresh cilantro
  • 15 grams chopped mint leaves
  • 10 grams chopped green onions
  • 20 grams roughly chopped roasted peanuts

Dressing: 

  • 1 tablespoon peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1 small red chili, finely chopped
  • Salt and pepper, to taste

Procedure:

  • In a large bowl, combine the shredded chicken, red cabbage, carrots, cucumber, red bell pepper, cilantro, mint leaves, and green onions.
  • In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, minced garlic, and chili. Adjust salt and pepper to taste.
