Crunchy Wheat Burrito

Crunchy wheat burrito is a simple yet delicious dish which is made with the goodness of vegetables and rice. It is a perfect dish to be tried upon and relish the bundles of nutrition along with amazing taste.

Ingredients:
For burrito –
- 1 whole wheat tortilla
- 20 grams cooked brown rice
- 20 grams onion
- 20 grams tomatoes
- 20 grams broccoli
- 2-3 green chillies
- 10 grams green peas
- Salt as per taste
- 1 teaspoon olive oil
For citrus vinaigrette-
- Fresh coriander leaves
- ½ teaspoon lemon juice
- 1-2 garlic clove
- Salt and pepper as per taste

Method:
- Firstly to make cilantro – lime vinaigrette Mix all the ingredients thoroughly in a blender and keep aside.
- Then add rice along with water and bring it to boil until the rice absorbs the water and becomes soft.
- Meanwhile, heat some oil in a sauce pan and add finely chopped green chilies and onions.
- Allow them to cook, then add the rest of the vegetables and allow them to cook for a few more minutes.
- Add the spices and mix well.
- Now take tortilla sheets and cook them thoroughly from both sides on a nonstick pan.
- Spread the cilantro-lime vinaigrette over cooked tortilla sheets and then add rice and vegetables to it.
- Roll it to form a wrap and serve hot.
