Salsa Dipped Baked Eggs is a savory and satisfying dish where eggs are gently baked in a flavorful salsa base. The combination of the rich, runny yolks and the zesty salsa makes this a simple yet vibrant meal, perfect for breakfast, brunch, or even dinner.
For a Serving Size of Two:
Ingredients:
4 large eggs
200 grams salsa (store-bought or homemade)
1 small onion, finely chopped (50 grams)
1 clove garlic, minced
1 tbsp olive oil
1/2 tsp cumin powder
1/2 tsp paprika or chili powder
Salt and pepper to taste
Fresh cilantro or parsley for garnish
50 grams shredded cheese (optional)
Procedure:
Preheat Oven: Preheat your oven to 180°C (350°F).
Prepare the Base: In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until soft, about 3-4 minutes. Stir in the minced garlic, cumin, and paprika, and cook for 1-2 more minutes until fragrant.
Add Salsa: Pour the salsa into the skillet and bring it to a simmer. Let it cook for about 5 minutes to thicken slightly. Season with salt and pepper.
Transfer to Baking Dish: Pour the salsa mixture into a small oven-safe dish, spreading it evenly.
Add Eggs: Create 4 small wells in the salsa and crack an egg into each one. If using, sprinkle the shredded cheese over the top.
Bake: Place the dish in the oven and bake for 12-15 minutes, or until the egg whites are set but the yolks are still runny. If you prefer firmer yolks, bake a little longer.
