Beet Tart with Cashew Cream

The Beet Tart with Cashew Cream is a vibrant and nutritious dish that features a blend of sweet, earthy beets and creamy cashew topping. The beet filling, spiced with cumin, coriander, and smoked paprika, is nestled in a tart shell and baked to perfection. The cashew cream, made from soaked cashews blended with lemon juice and garlic, adds a rich and tangy contrast, making this tart both visually appealing and delicious.

Ingredients:
For the Beet Tart:
- 150 grams peeled and chopped, cooked beets
 - 1 teaspoon olive oil
 - 1 clove garlic, minced
 - 50 grams finely chopped onion
 - 1/4 teaspoon ground cumin
 - 1/4 teaspoon ground coriander
 - 1/4 teaspoon smoked paprika
 - Salt to taste
 - Black pepper to taste
 - 1 pre-made tart shell (store-bought or homemade; 1 small tart shell for 2 servings)
 
For the Cashew Cream:
- 50 grams raw cashews, soaked in water for at least 2 hours
 - 2 tablespoons lemon juice
 - 1 teaspoon olive oil
 - 1/4 cup water (60 ml, adjust for desired consistency)
 - 1 clove garlic
 - Salt to taste
 
Procedure:
- Heat olive oil in a pan over medium heat. Add minced garlic and chopped onion, sautéing until the onion is translucent.
 - Add cumin, coriander, smoked paprika, salt, and pepper, and sauté for another minute.
 - Add the cooked beets and cook for 5-7 minutes, stirring occasionally, until the beets are well-coated with the spices and softened.
 - Let the beet mixture cool slightly, then mash it with a fork or blend it until smooth.
 - Drain the soaked cashews and place them in a blender or food processor.
 - Add lemon juice, olive oil, garlic, and a pinch of salt. Blend until smooth, gradually adding water until the cream reaches your desired consistency (thick but spreadable).
 - Preheat the oven to 180°C (350°F) if using a pre-made tart shell that needs baking.
 - Spoon the beet mixture into the tart shell, spreading it evenly. Bake the tart for 15-20 minutes if needed to crisp up the shell.
 - Let the tart cool slightly before serving.
 - Top with dollops of cashew cream and garnish with fresh herbs if desired. Serve warm or at room temperature.
