Tomato Chutney

Tomato Chutney is a vibrant and flavourful condiment made from ripe tomatoes, sautéed with spices and fresh herbs. This chutney pairs wonderfully with a variety of Indian dishes and can be used as a dip, spread, or side.
For a Serving Size of Two:
Ingredients:
- 200 grams chopped tomatoes
- 50 grams finely chopped onion
- 1-2 chopped green chilies (adjust to taste)
- 1 teaspoon oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 2 tablespoons fresh coriander leaves, chopped
Procedure:
- Heat oil in a pan over medium heat.
- Add mustard seeds and cumin seeds. Once they start to crackle, add the chopped onions and green chilies. Sauté until the onions become translucent.
- Add the chopped tomatoes to the pan. Stir well. Cook for about 10-15 minutes, stirring occasionally, until the tomatoes soften and the oil starts to separate from the mixture.
- Add turmeric powder, red chili powder, and salt. Mix well and cook for another 5 minutes. Taste and adjust the seasoning.
- Once the chutney has thickened to your desired consistency, turn off the heat. Garnish with fresh coriander leaves if using. Allow to cool before serving or storing.
