Buckwheat Khichdi

Buckwheat or kuttu is very much used on the days we fast. So here is a versatile recipe that can be made during fasting.
Nutritional Benefits –
Buckwheat is a gluten-free flour that is rich in fiber and antioxidants. It is good for digestion, and heart health and also helps in managing blood sugar. Peanuts are high in protein and fiber that are good for muscle building and improve digestion too.
Ingredients –
- ½ cup buckwheat flour
- 1 cup water
- 1 potato
- 1 tbsp peanuts
- 1Green chili
- 1 tsp cumin seeds
- 1 tsp ghee
- Coriander leaves
- Lemon juice for garnishing
- Salt to taste

Method –
- Heat ghee in a pan and add cumin, garlic cloves, and green chili.
- Add potato cubes and saute them till they become crisp.
- Now add peanuts and rinsed buckwheat and stir for 1-2 minutes.
- Add salt and let it cook for a few minutes.
- Garnish with coriander and lemon juice and serve hot.
