Sweet Potato and Lentil Power Bite is a snack which is a perfect treat to your taste buds. It is easy to prepare yet nutritious snacks to try your hands upon.
Nutritional benefits –
Sweet potatoes are a healthy option instead of potatoes. They are rich in fibre, vitamin B and Vitamin C. Black gram is a pulse which is rich in its protein and calcium content. It also contains some amount of fibre as well.
Ingredients –
- 1 Medium sweet potato
- 20 grams of Yogurt
- 1 teaspoon of lime juice
- 1/2 teaspoon of ground black pepper
- 20 grams onion, finely diced (about 1 cup diced)
- 1/4 teaspoon of garlic powder
- 1/4 teaspoon of onion powder
- 1/4 teaspoon of cumin
- 1/4 teaspoon of chili powder
- 1/2 teaspoon of sea salt
- 10 grams of black beans (boiled)
- 10 grams kidney beans(boiled)
- 1 teaspoons of mustard oil

Method –
- Firstly, preheat the oven to 350 degrees.
- Greece the baking tray and place the sweet potatoes on the baking tray. Then bake for 55-65 minutes
- Prepare the cream sauce by whisking together the yogurt, lime juice, and black pepper.
- Heat the oil over medium heat and saute onions for 5 minutes then add the spices and cook for an additional 3 minutes.
- Add the boiled black beans and kidney beans to it. Toss to combine and stir gently.
- Once the sweet potatoes are evenly baked, allow them to cool. Then cut the sweet potatoes open in the form of a boat.
- Scoop out the inner mashed potatoes and evenly spread the bean mixture and the yogurt sauce.
- Serve immediately and ENJOY!!
