Bittergourd Egg Rice

Bitter Gourd Egg Rice is a delicious dish to enjoy during lunch with your family and friends. It is made with goodness of eggs and bitter gourd to offer you with health benefits which makes it a perfect dish to be tried upon.

Rice serves as the instant source of energy. Eggs provide us with high biological value protein which helps in building up muscles. They also contain essential omega -3 fatty acids.

Ingredients:

  • 20 grams cooked rice
  • 20 grams tomato
  • 40 grams bitter gourd
  • 20 grams onion
  • 20 grams carrot
  • 1 teaspoon mustard seeds
  • 1 whole egg
  • 1 teaspoon black pepper
  • Salt as per taste
  • ½ teaspoon cumin seeds
  • 1 teaspoon olive oil
  • 3-4 sprigs mint leaves

Method:

  • Firstly, wash all the vegetables then chop onion, tomato, carrot, bitter gourd and coriander leaves.
  • Now, transfer the chopped carrot and bitter gourd to the mixie jar and grind them.
  • Take a pan and heat oil. Then add mustard seeds. Once they splutter, add chopped onions.
  • When the onions turn translucent add the vegetable paste, followed by chopped tomatoes and saute well.
  • Now close with a lid and heat in on a low flame.
  • Then, pour out the egg from its shell and beat well. Add salt and pepper as per taste and let the egg get cooked completely.
  • Lastly, add cooked rice to the mixture and mix well.
  • Serve hot and enjoy.
