Spiced Vegetable Soup

Ingredients like bottle gourd, ash gourd, ridge gourd, snake gourd, and spinach come together in a fragrant blend of spices, creating a satisfying and weight-loss friendly dish.

 

Ingredients:

  • 1 teaspoon coconut oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, slit lengthwise
  • 1/4 cup bottle gourd, peeled and diced
  • 1/4 cup ash gourd, peeled and diced
  • 1/4 cup ridge gourd, peeled and diced
  • 1/4 cup snake gourd, peeled and diced
  • 1/4 cup spinach leaves, chopped
  • 1/4 cup water
  • 1/4 cup coconut milk
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat coconut oil in a large pot or saucepan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
  2. Add chopped onions, minced garlic, grated ginger, and slit green chilies. Sauté until the onions turn translucent.
  3. Add the diced bottle gourd, ash gourd, ridge gourd, and snake gourd. Stir well and cook for a few minutes.
  4. Add the chopped spinach leaves and continue cooking for another couple of minutes.
  5. Pour in the water and coconut milk. Stir well to combine.
  6. Add turmeric powder, red chili powder, and salt to taste. Mix thoroughly.
  7. Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes or until the vegetables are tender.
  8. Once cooked, remove from heat. Allow the soup to cool slightly before serving.
  9. Garnish with fresh coriander leaves and serve hot.
