Spiced Vegetable Soup

Ingredients:
- 1 teaspoon coconut oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 medium onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece ginger, grated
- 2 green chilies, slit lengthwise
- 1/4 cup bottle gourd, peeled and diced
- 1/4 cup ash gourd, peeled and diced
- 1/4 cup ridge gourd, peeled and diced
- 1/4 cup snake gourd, peeled and diced
- 1/4 cup spinach leaves, chopped
- 1/4 cup water
- 1/4 cup coconut milk
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Heat coconut oil in a large pot or saucepan over medium heat. Add mustard seeds and cumin seeds. Allow them to splutter.
- Add chopped onions, minced garlic, grated ginger, and slit green chilies. Sauté until the onions turn translucent.
- Add the diced bottle gourd, ash gourd, ridge gourd, and snake gourd. Stir well and cook for a few minutes.
- Add the chopped spinach leaves and continue cooking for another couple of minutes.
- Pour in the water and coconut milk. Stir well to combine.
- Add turmeric powder, red chili powder, and salt to taste. Mix thoroughly.
- Bring the soup to a boil, then reduce the heat to low. Cover and simmer for about 15-20 minutes or until the vegetables are tender.
- Once cooked, remove from heat. Allow the soup to cool slightly before serving.
- Garnish with fresh coriander leaves and serve hot.
