GRILLED SWEET POTATO WITH LEMON HERB SAUCE

INGREDIENTS

  • 250 gms sweet potato
  • ½ cup finely chopped onions
  • ½ cup broccoli florets
  • ½ cup diced bell-peppers
  • ½ cup sliced carrots
  • 1 tsp minced garlic
  • 1 tsp olive oil
  • Salt & pepper to taste
  • For sauce
  • ¼ cup sour cream
  • ¾ cup plain whisked yogurt
  • ½ teaspoon lemon zest
  • 1 teaspoon lemon juice
  • ½ tsp ginger – garlic paste
  • ½ tsp mixed herbs
  • Salt & pepper to taste
  • Chopped parsley for garnishing
  • 1 tsp sesame seeds for garnishing
  • ½ tsp Olive oil

METHOD 

 Wash and peel sweet potato thoroughly, pat dry and then coat it with olive oil.

Heat a grilling pan and grill the sweet potato until well cooked and crispy golden brown. Cut the grilled sweet potato into medium size cubes season with salt & pepper and put in aside.

In a wok heat some oil and minced garlic and onions and saute the vegetables, season with salt and pepper.

For sauce

In a bowl add whisked curd, sour cream, add ginger – garlic paste, lemon zest, lemon juice, add mixed herbs, parsley, olive oil and whisk well. 

In a plate add grilled sweet potato, saute vegetables and pour the prepared lemon herb sauce garnish with sesame seeds and serve immediately.
