Sesame Banana Pancake

These Sesame Banana Pancakes are soft, fluffy, and naturally sweetened with ripe banana, giving a gentle sweetness without the need for added sugar. The nutty flavor of sesame seeds adds a delightful crunch, while the whole wheat flour provides a wholesome base for this easy and delicious breakfast or snack option.

For a Serving Size of Two:

Ingredients:

  • 60 grams whole wheat flour
  • 1 ripe banana (about 90 grams, mashed)
  • 2 teaspoons sesame seeds (white or black)
  • 100 ml milk (or any plant-based milk)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon powder
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon coconut oil
  • A pinch of salt

Procedure:

  • In a bowl, mash the ripe banana. Add almond milk and vanilla extract to it, and mix well.
  • In another bowl, mix the whole wheat flour, sesame seeds, baking powder, cinnamon powder, and a pinch of salt.
  • Gradually pour the wet ingredients into the dry ingredients and mix until a smooth batter forms. Avoid over-mixing to maintain fluffiness.
  • Heat a non-stick pan over medium heat and lightly grease it with coconut oil. Pour a ladle of batter onto the pan and spread it gently into a round shape. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  • Stack the pancakes and top with additional sesame seeds, banana slices, or any preferred toppings like peanut butter or fruit.
