CREAMY RAINBOW SANDWICH

INGREDIENTS

  • 2 multigrain bread slices
  • ¼ cup cashew cheese
  • cup unsweetened yoghurt
  • ½ teaspoon lemon or orange zest
  • ¼cup sliced cucumber
  • ¼cup sliced tomato
  • ¼cup cut coloured bell – peppers
  • 2-3 lettuce leaves
  • Pomegranate seeds or garnishing
  • Salt to taste
  • Freshly ground black pepper to taste
  • Chopped parsley for garnishing
  • 1 tsp Olive oil

METHOD

 In a bowl combine Greek yoghurt, cashew cheese, lemon or orange zest, pomegranate seeds and parsley, then add freshly ground pepper, salt and mix well. Refrigerate for 30-45 mins.

Toast the bread slices well on a pan using olive oil.

Spread the above-prepared mixture on both bread slices, then assemble the sliced vegetables (cucumber, tomato, bell- peppers and lettuce leaves) on one bread slice and cover it with the other piece to make a sandwich.

Serve immediately.
