CREAMY RAINBOW SANDWICH

INGREDIENTS
- 2 multigrain bread slices
- ¼ cup cashew cheese
- ⅔ cup unsweetened yoghurt
- ½ teaspoon lemon or orange zest
- ¼cup sliced cucumber
- ¼cup sliced tomato
- ¼cup cut coloured bell – peppers
- 2-3 lettuce leaves
- Pomegranate seeds or garnishing
- Salt to taste
- Freshly ground black pepper to taste
- Chopped parsley for garnishing
- 1 tsp Olive oil
METHOD
In a bowl combine Greek yoghurt, cashew cheese, lemon or orange zest, pomegranate seeds and parsley, then add freshly ground pepper, salt and mix well. Refrigerate for 30-45 mins.
Toast the bread slices well on a pan using olive oil.
Spread the above-prepared mixture on both bread slices, then assemble the sliced vegetables (cucumber, tomato, bell- peppers and lettuce leaves) on one bread slice and cover it with the other piece to make a sandwich.
Serve immediately.
