Pea Pesto Pappardelle

Pasta is a staple food in many diets. It is quick, inexpensive and filling. This recipeof peas pesto pappardelle is enriching with various nutrients making it a wholesome meal.

Peas are one of the nutrient-dense food ingredients. They are a good source of dietary fibre, Vitamin A, iron, folate, Vitamin C etc.

Ingredients:

  • 15 grams pappardelle
  • 10 grams fresh peas
  • 5 grams parmesan cheese
  • ½ teaspoon lemon zest.
  • 1-2 spring chives
  • Salt and Pepper to taste

Method:

  • Boil pappardelle. Reserve some cooking water; drain and return pasta to pot.
  • While pasta is cooking, add a few peas to the food processor and blend it. Add parmesan cheese and lemon zest in the food processor ,season with salt and pepper and blend it further.
  • Add the cheese mixture, remaining fresh peas, and pasta water to the pot with cooked pasta; toss to coat pasta in sauce.
  • Garnish with sprinkled chopped chives for serving.
