For a Serving Size of Two:

Ingredients:

  • 2 whole eggs
  • 50 grams baby spinach
  • 50 grams halved cherry tomatoes
  • 50 grams diced avocado
  • 30 grams cooked quinoa or brown rice
  • 1 tablespoon feta cheese
  • 1 tsp olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste 

Procedure: 

  • Boil or poach the egg to your preferred level of doneness. For a creamy texture, a soft-boiled egg works well.
  • Once cooked, peel and set aside.
