This vibrant Guacamole with Pomegranate Pearls adds a refreshing twist to the classic avocado dip. For a Serving Size of Two:
Ingredients:
- 200 grams ripe avocados (about 2 medium avocados)
- 50 grams diced cherry tomatoes
- 30 grams finely chopped red onion
- 1 tablespoon lime juice
- 1 small minced garlic clove
- Salt to taste
- 40 grams pomegranate pearls (seeds)
- Fresh coriander leaves for garnish
Procedure:
- Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Mash the avocado with a fork until you reach your desired consistency (smooth or chunky).
- Add the diced cherry tomatoes, chopped red onion, lime juice, minced garlic, and salt to the mashed avocado. Gently mix until all the ingredients are well combined.
- Fold in the pomegranate pearls carefully to avoid breaking them. This will add a delightful crunch and burst of sweetness to your guacamole.
- Transfer the guacamole to a serving bowl, garnish with fresh coriandr leaves if desired, and serve with tortilla chips, veggie sticks, or as a topping for salads and sandwiches.
