Broccoli Melts

For a Serving Size of Two:
Ingredients:
- 200 grams chopped broccoli florets
- 60 grams whole wheat bread or sourdough bread
- 30 grams feta cheese
- 1 teaspoon olive oil
- 1 teaspoon butter
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon red chili flakes
- Salt to taste
- 1 tablespoon chopped parsley
Procedure:
- Preheat your oven to 180°C (350°F).
- In a pot of boiling water, blanch the chopped broccoli for about 2-3 minutes until bright green and slightly tender. Drain and set aside.
- In a skillet, heat olive oil and butter over medium heat. Add the whole wheat bread slices and toast them lightly on one side until golden brown. Remove from skillet and set aside, toasted side up.
- In a bowl, combine the blanched broccoli, cheese, garlic powder, black pepper, red chili flakes, and salt. Mix well to combine.
- Spoon the broccoli and cheese mixture generously over the toasted side of each bread slice.
- Place the assembled bread on a baking tray and bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with chopped parsley, and serve warm.
