Steamed Banana Leaf Fish

For a Serving Size of Two:
Ingredients:
- 200 grams fish fillet
- 50 grams finely chopped onion
- 30 grams finely chopped tomato
- 10 grams ginger-garlic paste
- 20 grams fresh coriander leaves, chopped
- 2 green chilies, slit
- 1 tablespoons lemon juice
- 2 teaspoons coconut oil
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
- ½ teaspoon salt
- 2 banana leaves (for wrapping)
Procedure:
- Cut the banana leaves into large squares (about 30 cm x 30 cm) and briefly wilt them over an open flame or in hot water to make them pliable.
- In a bowl, combine the fish fillet with onion, tomato, ginger-garlic paste, coriander leaves, green chilies, lemon juice, coconut oil, turmeric powder, red chili powder, and salt. Mix well to coat the fish evenly and let it marinate for at least 15-20 minutes.
- Place the marinated fish in the center of each banana leaf square. Fold the sides over the fish and then roll it up tightly, securing it with a toothpick or string.
- Place the wrapped fish packets in a steamer or a large pot with a steaming rack. Steam for about 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Carefully unwrap the banana leaf and serve the fish hot, garnished with extra coriander if desired. It pairs well with steamed rice or quinoa.
