Chickpea Spinach Stew

A combination of solid and liquid stew is the perfect meal for chilling days. A savoury dish with different flavours for satisfying taste buds.

Ingredients

  • ½ Cup Chickpea
  • 1 Tsp. Olive Oil
  • ¼ Tsp. Dried Oregano
  • ¼ Tsp. Crushed Red Pepper
  • ¼ Tsp. Fennel Seeds
  • ¼ Cup Peas
  • 1 small carrot, diced
  • 1 Tsp. Garlic powder
  • 1 Tbsp. Tomato paste
  • ¼ Tsp. Black Pepper
  • Salt to taste
  • 1 Cup Vegetable Stock
  • ¾ Cup Spinach
  • 2 Tbsp. Parmesan Cheese

Method

  • Mash chickpea with fork.
  • Heat oil in a pan, over a medium flame add Peas, Carrots, and garlic powder; stirring often, add oregano, fennel seeds, and crushed red pepper, tomato paste; cook for 2-3 minutes.
  • Add vegetable stock and the mashed and whole chickpeas, spinach, pepper and salt to the pot. Keep on simmer until the vegetable are tender.
  • Stew is ready to be served, transfer it to the bowl and garnish with parmesan cheese.
