Chickpea Spinach Stew

Ingredients
- ½ Cup Chickpea
- 1 Tsp. Olive Oil
- ¼ Tsp. Dried Oregano
- ¼ Tsp. Crushed Red Pepper
- ¼ Tsp. Fennel Seeds
- ¼ Cup Peas
- 1 small carrot, diced
- 1 Tsp. Garlic powder
- 1 Tbsp. Tomato paste
- ¼ Tsp. Black Pepper
- Salt to taste
- 1 Cup Vegetable Stock
- ¾ Cup Spinach
- 2 Tbsp. Parmesan Cheese
Method
- Mash chickpea with fork.
- Heat oil in a pan, over a medium flame add Peas, Carrots, and garlic powder; stirring often, add oregano, fennel seeds, and crushed red pepper, tomato paste; cook for 2-3 minutes.
- Add vegetable stock and the mashed and whole chickpeas, spinach, pepper and salt to the pot. Keep on simmer until the vegetable are tender.
- Stew is ready to be served, transfer it to the bowl and garnish with parmesan cheese.
