Kiwi Quinoa Veggie Fusion

This vibrant Kiwi Quinoa Veggie Fusion combines roasted vegetables, fresh kiwi, and nutrient-dense quinoa into a refreshing, flavorful dish. Roasted cucumber, cherry tomatoes, and onion add a delicious depth of flavor, while the kiwi provides a juicy, tangy contrast. Tossed with a zesty herb dressing, this dish is perfect as a light meal.

For a Serving Size of Two:

Ingredients:

  • 60 grams quinoa
  • 60 grams chopped cucumber
  • 60 grams halved cherry tomatoes
  • 60 grams kiwi, peeled and chopped
  • 60 grams onion, chopped
  • ¾ teaspoon vinegar
  • ¾ teaspoon thyme
  • ¾ teaspoon oregano
  • ¾ teaspoon chili flakes
  • 1 teapsoon olive oil

Procedure:

  • Preheat your oven to 400°F (200°C).
  • Place the chopped cucumber, cherry tomatoes, and onion on a baking sheet.
  • Drizzle with 15 grams of olive oil and season with ¾ teaspoon each of thyme, oregano, and chili flakes. Bake for 20-30 minutes or until the vegetables are golden brown.
  • Rinse quinoa under cold water. Cook the quinoa in a pot with water (usually 1 part quinoa to 2 parts water) until it’s soft and the water is absorbed (about 15 minutes).
  • Peel and chop kiwi into small pieces.
  • Once the vegetables are roasted and quinoa is cooked, combine them in a serving bowl.
    Add the chopped kiwi to the bowl.
  • Mix ¾ teaspoon vinegar with the remaining thyme, oregano, and chili flakes.
    Toss the dressing over the salad mixture.
  • Mix everything well and serve your flavorful Kiwi and Quinoa Mix.
