Spiced Carrot Cookies

Spiced Carrot Cookies are a delightful blend of warming spices, hearty oats, and nutritious carrots. These cookies offer a perfect balance of flavor and nutrition, making them an excellent choice for a healthy snack or dessert.

For a Serving Size of Two:

Ingredients:

  • 60 grams almond flour
  • 60 grams rolled oats
  • 1 teaspoon ground cinnamon
  • 1 inch ground ginger
  • 3 – 4  ground cloves
  • 2 – 3 ground nutmeg
  • 1 teaspoon sea salt
  • 3 teaspoons coconut oil, melted
  • 60 grams shredded carrots
  • 2 teaspoons chopped walnuts
  • 2 teaspoons raisins

Procedure:

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a mixing bowl, combine almond flour, rolled oats, ground cinnamon, ground ginger, ground cloves, ground nutmeg, and sea salt. Mix well.
  • Add melted coconut oil to the dry ingredients. Stir until well combined and the mixture starts to clump together.
  • Add in shredded carrots, chopped walnuts, and raisins. Mix until evenly distributed.
  • Take spoonfuls of the dough and shape them into small cookies. Place them on the prepared baking sheet.
  • Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.
  • Once cooled, enjoy these healthy and flavorful spiced carrot cookies as a nutritious snack or dessert.
