SPICED CARROT COOKIES

Looking for healthy treats to satisfy your childrens cravings? This is the perfect recipe for you.

INGREDIENTS

  • ¼ cup whole wheat flour
  • 1 tsp baking powder
  • ½ cup old-fashioned rolled oats
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • 1/8 tsp ground nutmeg
  • ½ tsp sea salt
  • 1 tsp pure maple syrup
  • 2 tbsp coconut oil, melted enough to stir
  • 1 tbsp shredded coconut
  • ½ cup shredded carrots (from 1 medium carrot)
  • 1 tbsp cup walnuts, chopped
  • 1 tbsp cup raisins

   

METHOD 

  1. Place the rack in the top third of the oven and preheat to 375°F. Using parchment paper, line two baking pans.
  2. Thoroughly combine the flour, oats, baking powder, spices, and salt in a large bowl. The maple syrup and coconut oil should be whipped together in a different bowl. Combine thoroughly after mixing. Add the shredded coconut, carrots, walnuts, and raisins after stirring. The wet ingredients should be added to the dry mixture and stirred together until a dough is formed.
  3. Drop portions of the cookie dough onto the prepared baking sheets, spacing them apart by about 2 inches. Bake the cookies, one baking sheet at a time, for 10 to 12 minutes, or until the bottom and top of the cookies are gently browned. Continue by baking the cookies on the second baking sheet. Before eating, move the cookies to a wire rack to cool fully.
