Mango overnight oats

With the summer season, Mangoes are the most sought after fruit. But many people are worried to include mangoes in their diet because they believe that it will make them gain weight or their blood sugar will go haywire.
But with proper portions and combining mangoes with fiber rich grain like oats, it is possible to enjoy this fruit during the season without feeling guilty.
Nutritional value: This recipe is a perfect one for those who have very little time to cook up a decent breakfast in the morning. Not only does it provide vitamin A, C, it also gives enough proteins and fiber to help sustain throughout the day.
Just mix all the ingredients and refrigerate it overnight, next morning it is ready to eat! How easy can that be? Healthy bhi tasty bhi aur jhat pat bhi!
Ingredients:
- ⅓ cup Rolled Oats
- ½ cup milk – dairy or non-dairy
- ⅓ cup yogurt
- 1 cup Chopped Mangoes to get ½ cup puree
- ½ cup Mango cubes
- 1.5 teaspoon chia seeds
- 1 tablespoon honey
For topping
- ¼ cup chopped mangoes
- 2-3 sliced almonds
- ½ tablespoon of chopped pistachios
- 1 tablespoon roasted pumpkin seeds
- Honey to drizzle – as required
Method:
- Into a blender , add 1 cup mangoes ( or ½ cup mango puree ), milk , curds and honey
- Blend everything together to smooth puree.
- Into a mixing bowl , add rolled oats , chia seeds and mango puree, stir everything.
- Cover and set in the refrigerator overnight ( or for minimum 4 hrs ) .
- Next day, top it with a few mango cubes, pistachios, almonds, raisins and melon seeds.
- Eat chilled
Note: You can change the fruit from mangoes to berries or even bananas. Topping can be completely your choice from nuts, seeds to dried fruits. You can even add cacao nibs for garnish.
