Caprese Avo Toast

Caprese Avo Toast is a delicious and vibrant dish that combines the creamy richness of mashed avocado with the fresh flavors of a traditional Caprese salad. For a Serving Size of Two:

Ingredients:

  • 2 slices whole-grain or sourdough bread
  • 1 ripe avocado (about 100 grams), mashed
  • 100 grams halved cherry tomatoes
  • 50 grams sliced fresh mozzarella
  • 1-2 tablespoons fresh basil leaves, chopped
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Procedure:

  • Lightly toast the slices of whole-grain or sourdough bread until they are golden and crisp.
  • In a small bowl, mash the ripe avocado with a fork until smooth. Season with salt and pepper to taste.
