Apple Pancakes

For a Serving Size of Two:

Ingredients:

  • 60 grams whole wheat flour
  • 1 small apple (about 100 grams), peeled and finely grated
  • 1 egg
  • 100 ml almond milk or cow’s milk
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon ground flaxseeds
  • 1/2 teaspoon oil or for cooking
  • A pinch of salt

Procedure:

  • In a mixing bowl, combine the whole wheat flour, grated apple, egg, milk, cinnamon powder, vanilla extract, ground flaxseeds, and a pinch of salt.
  • Mix well until you get a smooth batter. The consistency should be thick but pourable. If it’s too thick, add a little more milk.
  • Heat a non-stick pan or griddle over medium heat and lightly grease with oil or butter. Pour a small amount of batter onto the pan to form a pancake, spreading it gently with the back of a spoon.
  • Cook for 2-3 minutes on each side or until golden brown and cooked through. Flip carefully using a spatula.
  • Serve the apple pancakes warm, topped with a sprinkle of cinnamon, a dollop of yogurt, or fresh fruit if desired.
