Apple Orange Salad

With the hot summer weather arriving quickly, a cool crisp salad can be the basis for a light and refreshing meal. They’re easy to make at home, and to order in a restaurant when dining out. And, with their multiple health benefits, consuming a serving of leafy greens each day can be one of the best habits to get into, summer or winter.


  • A diet rich in vegetables and fruits can lower blood pressure, reduce risk of heart disease and stroke, prevent some types of cancer, lower risk of eye and digestive problems, and have a positive effect upon blood sugar which can help keep appetite in check.
  • Walnuts contain important phytochemicals, as well as high amounts of polyunsaturated fats that offer potential benefits for both brain health and function.
  • Regularly having a small amount of vinegar in your diet may help control your blood sugar more effectively. Studies have shown that vinegar controls blood sugar spikes after meals rich in carbohydrates


  • mixed salad greens,
  • torn into bite-size pieces (or a bag of salad greens) (1 cup),
  • raw walnuts- chopped (4-5),
  • small red onion, finely chopped
  • (1/4) tart green apple,
  • 1/4 cup dried cherries (1/4th cup)
  • seasoned rice vinegar (½ tbsp.)
  • orange juice (½ tbsp.)

  • Combine salad greens, walnuts, onion, and apple or cherries in a large bowl.
