Instant Lentil Tacos

Instant Lentil Tacos are a quick and delicious plant-based meal that combines seasoned lentils with fresh toppings, all wrapped in warm tortillas. This recipe is perfect for a busy weeknight, providing a nutritious and satisfying meal in under 20 minutes.

For a Serving Size of Two:

Ingredients:

  • 100 grams lentils (canned or cooked)
  • 2 small corn or flour tortillas
  • 50 grams onion, finely chopped
  • 1 small tomato, diced (about 50 grams)
  • 1/2 avocado, diced (about 50 grams)
  • 1/4 tsp cumin powder
  • 1/4 tsp smoked paprika
  • 1/4 tsp chili powder (adjust to taste)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • Lime wedges for serving

Procedure:

  1. Prepare the Filling: If using canned lentils, drain and rinse them. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the lentils, cumin powder, smoked paprika, chili powder, salt, and pepper. Stir and cook for about 5 minutes until heated through.
  2. Warm the Tortillas: In a separate pan or directly over the flame, warm the tortillas for about 30 seconds on each side until pliable.
  3. Assemble the Tacos: Divide the lentil mixture evenly between the two tortillas. Top with diced tomatoes, avocado, and any additional toppings you desire.
  4. Garnish and Serve: Garnish with fresh cilantro or parsley and serve with lime wedges on the side for a zesty finish.
