Velvety Sweet Potato Soup is a creamy and flavorful dish that combines the natural sweetness of sweet potatoes with warm spices like cinnamon and cumin. Coconut milk adds a silky texture, while smoked paprika introduces a subtle depth of flavor. This hearty soup is perfect for cozy meals and can be enjoyed as a starter or a light main course.

For a Serving Size of Two:

Ingredients:

  • 300 grams peeled and diced sweet potatoes

  • 1/2 teaspoon grated ginger
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon crushed black pepper
  • 400 ml vegetable stock or water
  • 100 ml coconut milk
  • 1 tablespoon pumpkin seeds, for garnish
  • 1 tablespoon chopped parsley, for garnish

Procedure:

  • Heat olive oil in a pot over medium heat. Add chopped onions, minced garlic, and grated ginger. Sauté until onions are soft and translucent.
  • Stir in ground cumin, cinnamon, and smoked paprika. Add the diced sweet potatoes and mix well.
  • Pour in the vegetable stock or water, bring to a boil, and then reduce the heat. Cover and let it simmer for 15–20 minutes until the sweet potatoes are tender.
  • Use an immersion blender to purée the soup until smooth. Adjust the consistency by adding a little more stock if needed.
  • Stir in coconut milk, adjust salt and pepper to taste, and let it simmer for another 2–3 minutes.
  • Pour the soup into bowls and garnish with pumpkin seeds and chopped parsley. Serve warm with crusty bread.

Nutritional Benefits:
