Oats, Cranberry and Walnut Bread

This Oats, Cranberry, and Walnut Bread is a wholesome treat, combining the nutty flavor of oats, the crunch of walnuts, and the sweetness of dried cranberries. It’s a soft, hearty loaf perfect as a snack, packed with nutritious ingredients and lightly sweetened.

For a Serving Size of Two:

Ingredients:

  • 60 grams rolled oats
  • 50 grams whole wheat flour
  • 20 grams dried cranberries
  • 15 grams walnuts, chopped
  • 1 small mashed banana
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon powder
  • 1/8 teaspoon salt
  • 80 ml plain yogurt
  • 1 tablespoon olive oil
  • 1 egg

Procedure:

  • In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, baking soda, cinnamon powder, and salt.
    In another bowl, whisk the egg, olive oil, yogurt  and mashed banana.
  • Pour the wet ingredients into the dry mixture and gently fold them together until a thick batter forms. Add the chopped walnuts and dried cranberries, mixing them in evenly.
  • Preheat the oven to 180°C (350°F). Pour the batter into a small greased loaf tin or muffin molds. Bake for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!
