Ingredients:

  • 2 cloves garlic, minced
  • 1-2 green onions, chopped
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon turmeric powder (optional, for color)
  • Salt and pepper to taste
  • 1 tablespoon oil (sesame or vegetable)
  • Fresh cilantro or basil for garnish
  • 1 tablespoon cashews or roasted peanuts (optional, for topping)

Procedure:

  • Heat oil in a large skillet or wok over medium-high heat. Add garlic and onion, sautéing until fragrant.
  • Add carrots, bell pepper, and peas, cooking for 2-3 minutes until slightly tender.
  • Add the diced pineapple and stir-fry for another minute, letting it caramelize slightly.
  • Stir in the cooked rice, breaking up any clumps. Add soy sauce, curry powder, and turmeric powder, mixing well to coat the rice evenly.
  • Season with salt and pepper, adjusting to taste, and cook for another 2-3 minutes until everything is heated through.
  • Garnish with green onions, fresh cilantro or basil, and roasted cashews or peanuts if desired.
