Cucumber Chia Juice

For a Serving Size of Two:
Ingredients:
- 200 grams peeled and chopped cucumber
 - 250 ml coconut water
 - 1 tablespoon chia seeds
 - 1 teaspoon lemon juice
 - 1-2 fresh mint leaves
 - A pinch of salt
 - Ice cubes
 
Procedure:
- In a small bowl, soak the chia seeds in 3-4 tablespoons of water for about 10 minutes, or until they form a gel-like consistency.
 - In a blender, combine the chopped cucumber, coconut water, lemon juice, mint leaves, and a pinch of salt. Blend until smooth.
 - If you prefer a smoother texture, strain the juice through a fine-mesh sieve.
 - Add the soaked chia seeds to the cucumber juice and stir well. Pour the juice into glasses with ice cubes if desired, and serve immediately.
