Spinach Potato Cakes

Spinach potato cakes are an amazing snack to make way for your house parties or tea time snacking. The best part is that these are baked and not deep fried which makes them a super healthy choice.

Potato is rich in potassium, vitamin C and Vitamin B6. It is a starchy vegetable which keeps you fuller for a longer period of time thereby curbs satiety. Spinach which is one of the main ingredients of this dish is an excellent source of Vitamin A, Vitamin K, Vitamin C and folate and also is a fair source of manganese, magnesium, iron and vitamin B2.
Ingredients
- 20 grams potato, boiled and mashed
- 20 grams onion, finely chopped
- 1 green chillies, finely chopped
- 20 grams spinach, finely chopped
- 1 teaspoon olive oil for greasing the baking sheet and breads
- ¼ teaspoon cumin powder
- Red chilli powder, to taste
- Salt, to taste

Method
- Preheat the oven to 200 C and grease a baking sheet with olive oil.
- Combine the mashed potatoes, finely chopped spinach, onions, green chilies, cumin powder and salt.
- Mix and stir to combine all the ingredients well.
- Now make cakes of your desired shape using a pastry cutter out of mashed potato mixture.
- Repeat the same process with the remaining mixture to make cakes.
- Put them in the preheated oven and bake for about 15 to 20 minutes until the crust turns golden brown in color.
- Serve with mint and coriander chutney.
