Spiced Stuffed Cauliflower

Spiced Stuffed Cauliflower is a dish that combines the warmth of aromatic spices with the natural richness of cauliflower. The whole cauliflower is blanched to soften, then stuffed with a flavorful mixture of sautéed onions, garlic, raisins, and chopped almonds. Once roasted, the cauliflower becomes tender on the inside with a golden, slightly crispy exterior. The raisins add a touch of sweetness, while the almonds contribute a satisfying crunch. Garnished with fresh cilantro, this dish is both visually stunning and delicious, making it a perfect centerpiece for any meal.
For a Serving Size of Two:
Ingredients:
- 400 grams cauliflower
- 1 tablespoon olive oil
- 50 grams finely chopped onion (50 grams)
- 2 cloves minced garlic
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon black pepper
- Salt to taste
- 15 grams raisins
- 15 grams chopped almonds
- 15 grams chopped cilantro
Procedure:
- Preheat your oven to 180°C (350°F). Remove the leaves and core from the cauliflower, keeping it whole.
- Blanch the cauliflower in boiling water for 5 minutes to slightly soften it, then drain and set aside.
- Heat olive oil in a pan over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, ground coriander, turmeric, smoked paprika, ground cinnamon, black pepper, and salt. Cook for 2 more minutes until fragrant.
- Stir in the raisins and chopped almonds, cooking for another 2 minutes. Remove from heat and mix in the chopped cilantro.
- Carefully stuff the prepared mixture into the crevices of the cauliflower, ensuring it’s evenly distributed.
- Place the stuffed cauliflower on a baking dish, drizzle with the remaining olive oil, and cover with aluminum foil.
- Roast the cauliflower in the preheated oven for 25-30 minutes, until tender when pierced with a knife.
- Remove the foil and roast for an additional 10 minutes to get a golden, crispy finish on the outside.
- Remove the cauliflower from the oven, and let it rest for a few minutes before slicing. Serve warm, garnished with extra cilantro.
