Sweet Chilli Mango Spring Rolls

Make the most of the summer with this super healthy and taste filled and nutrient-dense recipe.

 

Ingredients:

 

  • 6 rice paper spring roll wrappers
  • 1 ripe mango, peeled and sliced into thin strips
  • 1 small cucumber, julienned
  • 1 small carrot, julienned
  • 1/2 red bell pepper, thinly sliced
  • 1/2 cup fresh cilantro leaves
  • 1/4 cup chopped mint leaves
  • 1 tablespoon roasted peanuts, crushed

 

For the Sweet Chilli Sauce:

  • 2 tablespoons honey
  • 1 tablespoon fresh lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon Sriracha sauce (adjust to taste)
  • 1/2 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions:

  1. In a small bowl, mix all the ingredients for the sweet chilli sauce until well combined. Set aside.
  2. Prepare a large bowl of warm water. Dip one rice paper wrapper in the water for a few seconds until it softens. Place it on a clean surface.
  3. In the center of the wrapper, place a few mango slices, cucumber, carrot, red bell pepper, cilantro, mint, and a sprinkle of crushed peanuts.
  4. Fold the sides of the wrapper over the filling and then tightly roll it up from the bottom, similar to a burrito. Repeat the process with the remaining wrappers and filling ingredients.
  5. Serve the spring rolls with the sweet chilli sauce for dipping.
