Sweet Chilli Mango Spring Rolls

Make the most of the summer with this super healthy and taste filled and nutrient-dense recipe.
Ingredients:
- 6 rice paper spring roll wrappers
- 1 ripe mango, peeled and sliced into thin strips
- 1 small cucumber, julienned
- 1 small carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1/2 cup fresh cilantro leaves
- 1/4 cup chopped mint leaves
- 1 tablespoon roasted peanuts, crushed
For the Sweet Chilli Sauce:
- 2 tablespoons honey
- 1 tablespoon fresh lime juice
- 1 tablespoon soy sauce
- 1 teaspoon Sriracha sauce (adjust to taste)
- 1/2 teaspoon grated ginger
- 1 clove garlic, minced
Instructions:
- In a small bowl, mix all the ingredients for the sweet chilli sauce until well combined. Set aside.
- Prepare a large bowl of warm water. Dip one rice paper wrapper in the water for a few seconds until it softens. Place it on a clean surface.
- In the center of the wrapper, place a few mango slices, cucumber, carrot, red bell pepper, cilantro, mint, and a sprinkle of crushed peanuts.
- Fold the sides of the wrapper over the filling and then tightly roll it up from the bottom, similar to a burrito. Repeat the process with the remaining wrappers and filling ingredients.
- Serve the spring rolls with the sweet chilli sauce for dipping.
