This Refreshing Lentil-Watermelon Salad is a delightful combination of flavors and textures, perfect for a light summer meal. For a Serving Size of Two:
Ingredients:
- 120 grams cooked green or brown lentils
- 200 grams diced watermelon
- 50 grams diced cucumber
- 50 grams diced red bell pepper
- 30 grams finely chopped red onion
- 2 tablespoons crumbled feta cheese
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- 1 teaspoon chopped fresh mint leaves
- Salt to taste
- Black pepper to taste
Procedure:
- In a large bowl, combine the cooked lentils, diced watermelon, cucumber, red bell pepper, and red onion.
