Healthy Litti Chokha

Who said diet food had to be boring? Try this very well balanced nutritious meal from the state of Bihar.

For Litti:

Ingredients:

  • 2 cups whole wheat flour
  • 1/2 cup gram flour (besan)
  • 1/4 teaspoon carom seeds (ajwain)
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon salt
  • 1 taeaspoon ghee
  • Water (as needed)

For Sattu Filling:

Ingredients:

  • 1 cup roasted chana sattu (gram flour)
  • 2 tablespoons finely chopped onions
  • 2 tablespoons finely chopped coriander leaves
  • 1 teaspoon ginger-garlic paste
  • 1 green chili, finely chopped
  • 1/2 teaspoon carom seeds (ajwain)
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon mango powder (amchur)
  • Salt to taste
  • Water (as needed)

For Chokha:

Ingredients:

  • 4 medium-sized boiled potatoes
  • 1 medium-sized roasted eggplant (baingan)
  • 1 medium-sized roasted tomato
  • 2 green chilies, finely chopped
  • 2 tablespoons finely chopped onions
  • 2 tablespoons finely chopped coriander leaves
  • 1 teaspoon mustard oil
  • Salt to taste

Instructions:

  1. In a mixing bowl, combine the whole wheat flour, gram flour, carom seeds, turmeric powder, salt, and ghee (or oil). Mix well.
  2. Gradually add water and knead to form a firm dough. Cover and let it rest for 15-20 minutes.
  3. In a separate bowl, mix all the ingredients for the sattu filling, adding water as needed to make a moist stuffing.
  4. Preheat the oven to 400°F (200°C).
  5. Divide the dough into small portions and roll each portion into a small disc.
  6. Place a spoonful of the sattu filling in the center of each disc and seal the edges to form a stuffed ball (litti). Repeat for the remaining dough and filling.
  7. Place the littis on a baking sheet and bake for 25-30 minutes or until golden brown, turning them halfway through for even cooking.

For Chokha:

  1. In a mixing bowl, mash the boiled potatoes, roasted eggplant, and roasted tomato together.
  2. Add the finely chopped onions, green chilies, coriander leaves, mustard oil, and salt. Mix well.
  3. Serve the littis hot with chokha on the side.
