Gajar gojju

Carrot gojju is loved by all and is the perfect snack recipe. This recipe is very easy to make and is loved by all. The mix of sliced carrot along with the spices is delicious.
Nutritional benefits: Carrots are a great source of Vitamin A and potassium. It helps in lowering blood cholesterol and is good for eye health. Ginger provides various medicinal benefits by reducing muscle soreness and pain that helps in arthritis. It is anti-inflammatory and helps in the immunity system
Ingredients:
For paste:
- ½ teaspoon coconut oil
- 1 teaspoon of smashed ginger
- 1 green chili
- 1 teaspoon cumin seeds
- 1 teaspoon black pepper
- 1 teaspoon chana dal
- Sea salt as per taste
- 1 teaspoon coconut, grated
For base:
- ½ teaspoon coconut oil
- ½ teaspoon mustard seeds
- 1-2 curry leaves
- ½ teaspoon tamarind
- ½ teaspoon jaggery
- 50 grams sliced carrots

Method:
- Heat some oil in a skillet; add in the ginger, chili, cumin, and coriander seeds, chana dal, black pepper, coriander leaves, grated coconut, and salt as per taste.
- Allow them to cool to room temperature and make a paste of them while adding a little water.
- Then add some oil and saute curry leaves along with mustard seeds.
- Add a little bit of water along with tamarind extract, jaggery, and sliced carrot. Allow the mixture to cook for about 10-12 minutes.
- Serve with a paste prepared and enjoy!
