Egg Quinoa Burrito Bowl

The Egg Quinoa Burrito Bowl is a nutritious and vibrant dish that combines protein-packed quinoa and eggs with the freshness of cherry tomatoes, avocado, and shredded lettuce. Enhanced with the zesty flavors of lime and a hint of spices, this bowl is a wholesome and satisfying meal perfect for any time of the day.

For a Serving Size of Two:

Ingredients:

  • 60 grams quinoa 
  • 2 large eggs
  • 30 grams boiled kidney beans 
  • 30 grams boiled corn
  • 20 grams halved cherry tomatoes
  • 70 grams avocado diced 
  • 5 – 6 leaves shredded lettuce
  • 2 tablespoon chopped coriander 
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon lime juice

Procedure:

  • Rinse the quinoa under cold water.
  • In a saucepan, add water and bring it to a boil. Add the quinoa, reduce the heat to low, and cover the saucepan.
  • Simmer for about 15 minutes, or until the quinoa is cooked and the water is absorbed.
  • Fluff with a fork and set aside.
  • In another pan , heat the olive oil over medium heat.
  • Crack the eggs into the pan and scramble until fully cooked, about 2-3 minutes. Season with ground cumin, paprika, garlic powder, salt, and pepper.
  • Remove from heat and set aside.
  • In two bowls, divide the cooked quinoa evenly.
  • Top each bowl with scrambled eggs.
  • Add beans, corn, cherry tomatoes, diced avocado, and shredded lettuce.
  • Sprinkle chopped coriander over the top.
  • Drizzle lime juice over the bowls for added flavour.
