Assamese Black Sesame Chicken Curry

Assamese Black Sesame Chicken Curry is a rich and flavorful dish that showcases the earthy taste of black sesame seeds paired with tender chicken. The mustard oil lends a unique depth to the curry, while the garlic, ginger, and spices add a punch of warmth and flavor. This traditional Assamese recipe is simple yet delicious, perfect for a wholesome meal.
For a Serving Size of Two:
Ingredients:
- 500g boneless chicken, cut into pieces
- 2 tablespoons black sesame seeds
- 1 teaspoon mustard oil
- 100 grams finely chopped onion
- 100 grams finely chopped tomatoes
- 2 minced garlic cloves
- 1-inch ginger
- 2 green chillies
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- Salt to taste
- Fresh coriander leaves for garnish
- Water as needed
Procedure:
- Dry roast the black sesame seeds in a pan until fragrant and lightly browned. Allow them to cool and then grind them into a fine powder.
- Heat mustard oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.
- Add the minced garlic, grated ginger, and slit green chilies. Cook for a minute until the raw aroma disappears.
- Add the chicken pieces to the pan and cook until they turn white on all sides.
- Add the chopped tomato, turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the tomatoes soften.
- Pour water into the pan, enough to cover the chicken. Bring it to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes or until the chicken is cooked through and tender.
- Stir in the ground black sesame powder and cook for an additional 5 minutes, allowing the flavours to blend.
- Garnish with fresh coriander leaves and serve the Assamese Black Sesame Chicken Curry hot with steamed rice or roti.
