Tomato Onion Soup

Tomato onion soup is a perfect starter to your meals as it has tangy flavours to wake up your appetite.

Nutritional Benefits –
Tomatoes are rich in vitamin C and help protect the skin from sun damage. Onions are beneficial for lowering cholesterol and keeping the heart healthy. Also, olive oil is a good antioxidant.
Ingredients –

  • 2 tomatoes
  • 1 onion
  • 1 cup tomato juice
  • 1 tsp jaggery
  • 2 tsp olive oil
  • Coriander leaves
  • Black pepper
  • Salt to taste

Method –

  • Saute onions and tomato in a pan until soft.
  • Grind the mixture to a fine paste and strain it.
  • Now heat olive oil in a pan, add the above mixture, tomato juice, ½ cu of water, jaggery, black pepper and salt, and bring to a boil.
  • Serve hot, garnished with coriander leaves.
