Mango chia pudding

INGREDIENTS
- 1 large mango, peeled
- 1 tsp. chia seeds
- 1 cup coconut milk
- Pinch kosher salt
- ½ tsp Maple or date syrup, for serving
- Mango chunks for garnishing
METHOD
1.Place the mango’s flesh in the blender or food processor and purée until smooth. Slice the second mango into pieces.
- In a mixing dish, combine the chia seeds, coconut milk, maple or date syrup, and puréed mango.
- After that, incorporate the chopped mango while reserving a few chunks for a topping.
- After 15 minutes in the refrigerator, remove the mixture, stir it, and then return it to the refrigerator for an additional 15 minutes.
- Pour in serving glass, garnish with the remaining mango chunks, and serve.
