Mango chia pudding

INGREDIENTS

 

  • 1 large mango, peeled
  • 1 tsp. chia seeds
  • 1 cup coconut milk
  • Pinch kosher salt
  • ½ tsp Maple or date syrup, for serving
  • Mango chunks for garnishing

METHOD 

1.Place the mango’s flesh in the blender or food processor and purée until smooth. Slice the second mango into pieces.

  1. In a mixing dish, combine the chia seeds, coconut milk, maple or date syrup, and puréed mango.
  2. After that, incorporate the chopped mango while reserving a few chunks for a topping.
  3. After 15 minutes in the refrigerator, remove the mixture, stir it, and then return it to the refrigerator for an additional 15 minutes.
  4. Pour in serving glass, garnish with the remaining mango chunks, and serve.
