Berry & Chia Coconutty Pudding

This Berry & Chia Coconutty Pudding is a delicious and nutritious dessert that combines the creamy richness of coconut milk with the health benefits of chia seeds and fresh berries. This naturally sweetened pudding is a perfect way to indulge your sweet tooth while enjoying the goodness of whole foods. For a Serving Size of Two:
Ingredients:
- 200 grams coconut milk
- 30 grams chia seeds
- 30 grams mixed berries (e.g., strawberries, blueberries, raspberries, chopped if large)
- 20 grams ripe banana
- 1/2 teaspoon vanilla extract
- A pinch of salt
Procedure:
- In a mixing bowl, combine the coconut milk, chia seeds, mashed banana, vanilla extract, and a pinch of salt.
- Whisk the mixture well to ensure the chia seeds are evenly distributed and there are no lumps.
- Cover the bowl and refrigerate for at least 2 hours or overnight. This allows the chia seeds to absorb the liquid and thicken the pudding.
- After the pudding has set, give it a good stir. If it’s too thick, you can add a splash of coconut milk to reach your desired consistency.
- In serving bowls, layer the chia pudding with mixed berries, reserving some for topping. You can also swirl in some additional coconut milk for a creamy texture.
