Vegetable Delight Burrito

Vegetable Delight Burrito is a wholesome and flavorful dish filled with black beans, brown rice, and a colorful mix of fresh vegetables. This burrito is packed with plant-based protein and fiber, making it a healthy and satisfying meal.

For a Serving Size of Two:

Ingredients:

  • 1/2 cup cooked black beans (about 100 grams)
  • 1/2 cup cooked brown rice (about 100 grams)
  • 1/4 cup bell peppers, diced (about 30 grams)
  • 1/4 cup zucchini, diced (about 30 grams)
  • 1/4 cup corn kernels (about 30 grams)
  • 1/4 cup red onion, finely chopped (about 30 grams)
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 large whole wheat tortillas
  • 1/4 cup shredded lettuce
  • 1/4 cup diced tomatoes (about 30 grams)
  • 1/4 cup avocado, diced (about 30 grams)
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons salsa or low-fat Greek yogurt (optional)

Procedure:

  • Heat olive oil in a pan over medium heat. Sauté onions, bell peppers, zucchini, and corn until they’re slightly tender, about 3-4 minutes.
  • Add black beans, brown rice, cumin powder, smoked paprika, salt, and black pepper. Stir and cook for another 2-3 minutes, until well combined and heated through.
  • Warm the tortillas on a pan or in the microwave until soft.
  • Lay each tortilla flat and place a portion of the rice-bean mixture in the center.
  • Top with shredded lettuce, diced tomatoes, avocado, and fresh cilantro. Add salsa or Greek yogurt if desired.
  • Fold the sides of each tortilla and roll tightly into a burrito. Slice in half and serve warm.
