Rabri for Diabetics

Rabri is a traditional Indian dessert made from condensed milk that has been thickened and flavored with cardamom, nuts, and saffron. This diabetic-friendly version uses low-fat milk and khoya to create a rich and creamy texture without relying on any added sweeteners. For a Serving Size of Two:

Ingredients:

  • 500 ml low-fat milk
  • 50 grams khoya (mawa)
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon finely chopped nuts (almonds, pistachios, or walnuts)
  • A pinch of saffron strands
  • 1/4 teaspoon rose water

Procedure:

  • In a heavy-bottomed pan, bring the low-fat milk to a boil over medium heat, stirring occasionally to prevent it from sticking to the bottom.
  • Once it boils, reduce the heat and let it simmer until the milk reduces to about half its volume, stirring frequently.
  • Add the khoya to the simmering milk and mix well until it completely dissolves. Continue to simmer for a few more minutes until the mixture thickens to your desired consistency.
  • Stir in the cardamom powder and saffron strands, mixing well.
  • Remove from heat, add rose water  and let it cool slightly. Garnish with chopped nuts before serving. This can be enjoyed warm or chilled.
