Zesty Lemon Bar

Zesty Lemon Bars are a refreshing and nutritious treat made with a nutty almond flour base and a tangy lemon-chia topping. These no-bake bars are easy to make and offer a perfect balance of tartness and sweetness, ideal for a quick snack or dessert.

For a Serving Size of Two:

Ingredients:

  • 60 grams almond flour
  • 10 grams desiccated coconut
  • 1 tablespoon coconut oil
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1 tablespoon chia seeds
  • 1-2 medjool dates
  • A pinch of salt

Method:

  • In a bowl, mix the almond flour, desiccated coconut, melted coconut oil, and a pinch of salt until it forms a crumbly texture.
  • Press the mixture into a small greased or lined tray, forming an even layer. Use the back of a spoon to smooth it out.
  • In a separate bowl, mix the lemon juice, zest, chopped dates, and chia seeds.
  • Stir well and let it sit for 5 minutes so the chia seeds absorb some liquid.
  • Pour the lemon mixture over the almond flour base and spread evenly. Refrigerate for at least 1-2 hours until firm.
  • Once set, cut the lemon bars into small squares or bars.
